After years spent aging in wood and in the bottle, here is the thrill of uncorking a bottle that contains one of the reputedly best wines in the world.A lot of work, a lot of passion, a lot of care day after day have allowed our wine to reach this goal in the five years since the harvest.
It is thus possible to appreciate the complex aromas and aromas that unfold as the tasting progresses and hints of red fruits, cherry and then cinnamon and undergrowth emerge with long-lasting hints of spices in the finish.
Produced in a very limited quantity, so as not to give up the artisanal nature of the production and not to trespass on the small plot of land which manages to give it unique characteristics.
Our Brunello di Montalcino Podere Paganico docg:
Production area: Municipality of Montalcino.
Grape variety: 100% Sangiovese Grosso (called “Brunello” in Montalcino).
Maximum grape yield: 80 quintals per hectare.
Yield of grapes in wine: 68%.
Release for consumption: from January of the 5th year following the harvest, as per regulations.
Color: intense ruby red with violet reflections.
Smell: characteristic and intense, persistent, spicy aroma, which varies with refinement and maturation.
Taste: dry, warm, quite soft, quite fresh, quite tannic, structurally full-bodied.
Alcohol content: approximately 14°.
Total dry extract: approximately 33 g/l.
Packaging: in 0.75 and 1.50 liter Bordeaux bottles.
It is produced with selected grapes from our vineyard, managed with care and dedication, harvested by hand and immediately processed in our cellar.
Vinification takes place in stainless steel vats with a maximum capacity of 50 hl. with the addition of selected yeast after days of maceration. At the end of the fermentation, another 2-3 week maceration on the pomace follows. After racking, malolactic fermentation takes place and is transferred to 25-30 hl Allier oak barrels, where it is aged for 3 years. It is then bottled and aged for another 2 years.
In January of the 5th year it was finally labeled and put on the market.
Our production is around 7000 bottles per year.
